New Belgium Brewing


Colorado’s own New Belgium Brewing finds its first Denver home in RiNo. With a 2,000-square-foot brewery on the ground floor and 50 oak aging barrels on the 8th floor, guests of the hotel will enjoy a room-with-a-brew experience unique in the US.

Chef William Espiricueta has a passion for wood fired and smoked foods. After five years working alongside Chef Steve Redzikowski at Oak at Fourteenth and Acorn, Chef Bill introduces Smōk.
Smōk features smoked meats, vegetables, sides and sauces in ways that are both nuanced and forthright in flavor, color and texture. The smoker takes centerstage, where different woods and techniques are used to bring out the best in each dish and where every ingredient is touched by fire or smoke.

Safta brings you on a journey through food and beverage which pays homage to the culinary landscape of Israel. With influences that stem from the Middle East, Europe and North Africa, this menu reflects a collection of moments where food and culture have crossed paths, offering a taste of an ever-evolving cuisine. Wood fired pita bread baked steps from the table will soak up the flavors of Israel, Bulgaria, Yemen, Syria, Morocco, Turkey, Palestine and Greece.

grabowski's pizzeria


Grabowski’s Pizzeria is an old-school, crowd-pleasing pizzeria serving 100% hand-crafted family-style pizza. We make our own dough and cook our pizzas in an old fashioned rotating oven directly on a stone baking hearth. Our ingredients are carefully sourced with house-made Italian sausage, whole-milk mozzarella, and Stanislaus tomato sauce. Pizzas are offered in 12” and 16” pies and are meant to be shared with friends and family. Rounding out the menu are a selection of antipasti, salads, and sandwiches. Bar offerings include Boylan’s soda, Bull and Bush root beer on tap along with several local draft beers, cocktails, and wine. The restaurant mezzanine boasts a row of old-school pinball machines and the wall-mounted televisions are ideal for catching a game.

Temaki Den is the first restaurant of its kind in Colorado focusing on fresh and captivating, no-frills handrolls, made with equal parts care and creativity. Denver-diners will be given a casual, modern and approachable alternative to the traditional high-end sushi experience. Temaki-zushi, which translates literally to hand-roll sushi, is a simple roll of nori (seaweed) wrapped around shari (rice seasoned with vinegar) and neta (fish). Handrolls are small enough to be eaten in a few bites, and allow guests to try many different flavors and textures in one sitting.

From the creative minds of Smok and Acorn comes Bellota. Spanish for Acorn, Bellota taps into a shared culture and heritage to bring a menu of lively regional Mexican dishes deeply rooted in tradition and steeped in custom. Their a-la-carte menu features family-style dishes, regionally-inspired tacos, a half-dozen house made salsas and numerous offerings that take advantage of the wood-fired oven. The food is complemented with an agave-based bar program from the mind of Bryan Dayton and including Mexican cocktails beyond the margarita.
